There was a time, not too long ago, that meal time used to be a stressful mess for me. When my kids were growing up I was a stay at home mom. Life was a lot easier then. I was able to go to the grocery store when they were in school, prep food and cook without as much time stress. But then I started working full time. And I became a single mom. All in the matter of a few months. For a good year I tried to get my life and schedule in order. A home cooked meal for me at the time was putting a frozen pizza in the oven. I mean, it was cooked in my home, so that counts, right?
Anyway, when I was able to get a grip on things I started slowly chipping away at the chaos in my life. One way was getting my finances in order. Putting myself on a budget meant I had to get our eating out in order which meant I had to figure out how to make time to cook at home after working a full day. I was never really able to get a handle on it until I talked with a friend about making a menu plan in advance. Suddenly, it clicked. Instead of shopping every day or two for groceries and trying to figure out what I was going to make that morning I planned our meals a week in advance. Then we were able to get all our shopping done for the week over the weekend. Wow, what a difference this has made. Having this meal planner to print out every week has made life so much easier.
