As we are getting close to summer (and school starting, boo hoo!) I’ve been dreaming of ways to use up the last bits of fresh berries and fruit from the season. I made this fruit pizza earlier in the summer, but it’s the perfect dessert to end the summer too. I love using fresh fruit when I can, even though frozen is available year round, there are certain desserts that just can’t be made with frozen. Only fresh will do. Getting this fruit from the local farmers market would be the perfect way to top this fruit pizza and I might even try and make it a few times in the next few weeks so I can get the most of this season that I can. Anytime I can extend summer I will!
The topping on this yummy homemade sugar cookie pizza crust is a light, creamy, sweet cream cheese frosting. Then, topped with fruit and an apricot glaze it is so good! If you wanted to make this even easier to make, just use a store bought cookie sugar dough and skip the apricot glaze. But the extra effort is worth it! Trust me!
Sugar Cookie Fruit Pizza
Ingredients
Sugar Cookie Base
- 1 recipe Sugar Cookie Dough
- 2 tbsp flour
Fruit Topping
- 8 oz cream cheese
- 1/2 cup sugar
- 1 tsp vanilla
- 1 cup strawberries cut in half
- 1/2 cup blueberries
- 1/2 cup blackberries
- 2 kiwis, peeled and sliced
Glaze
- 2 tbsp apricot jam
- 1 tbsp water
Instructions

Preheat oven to 350°

Prepare your favorite sugar cookie recipe OR prepare one package of sugar cookie mix according to package instructions.

After preparing dough, form into a ball using your hands. Add flour to work surface and roll into a 12" circle, about 1/4" thick.

Bake in oven for 12-14 minutes until a light golden brown. Cool completely.

In a separate bowl, mix cream cheese, sugar, and vanilla until cream cheese is light and fluffy.

Spread cream cheese topping over cooled sugar cookie base evenly.

Add fruit to top of pizza, in whatever pattern you choose

In a small saucepan, slowly melt apricot jam and water in a saucepan. using a pastry brush, add a thin layer of glaze to the top of fruit pizza.

Serve immediately, or chill before serving.
