It’s fall! I thought I loved fall, and then I met my husband. He is a huge fall fan, so much so that he even wore his orange plaid shirt on the first day of fall! So, of course, I have to load up on all the fall goodies starting with this yummy pumpkin spice granola. Filled with pumpkin puree, pecans and pumpkin seeds, this granola is so full of fall goodness, but also fiber and nutrition to start your day the right way. The little bit of brown sugar, pumpkin pie spice and cinammon give this such a delicious fall smell and sweet taste.
The key to baking super crunchy granola is to make sure that the graloa is baked close together, but in a thin layer on the baking sheet. Also, using parchment paper keeps the granola sticking to itself instead of the pan. Once you pull it out of the oven, make sure you cool it completely before you break it apart. This will result in big chunks of granola that will be easy to eat as a snack, just pop it into your mouth like popcorn!
If you want to add a little bit more sweetness to this you can add chocolate chips. I think with my sweet tooth, this will definetly be in my next batch. But, if you do decide to add them, make sure that your granola is completely cool before you do. Store in a air-tight container for up to 2 weeks. Because of the pumpkin puree this will continue to get softer the longer you keep it.
Pumpkin Spice Granola
Ingredients
- 3 1/2 cups oats
- 1/2 cup shelled pumpkin seeds
- 1/2 cup rough chopped pecans
- 1 1/2 tsp pumpkin pie spice
- 1 tsp cinnamon
- 2 tbsp brown sugar
- 1 tsp vanilla
- 1 tsp salt
- 1/3 cup pumpkin puree
- 1/2 cup vegetable oil
- 1/2 cup maple syrup
Instructions

Preheat oven to 350 degrees.

Mix all ingredients together in bowl.

Spread granola on a parchment paper lined cookie sheet.

Bake in 350 degree oven for 22 minutes. Mix halfway through baking.
